I am a certified Italian wine snob and a hopeless believer in “we are what we eat” (W.A.W.W.E). I love to try and recreate tasty and healthy recipes using different spices I smuggled back from around the world.
Assume I am not in the wild seeking solitude; you can catch me throwing parties and being geeky about food pairings at @winepairingcompany or occasionally hosting and cooking at tōdo studio for old and new friends.

So… What is TŌDO (toh-doh)?
Short version:
TŌDO (pronounced [toh-doh]) is a Spanish word that means everything, every bite, everyone. It's an inclusive platform that welcomes everyone, connecting every food and culture with healthy living to reminisce people's memories of dining with those they care about.
Long version:
It all started on a solo trip to Montezuma in Costa Rica, where I meditated and practiced yoga with strangers for a week. Each day, we would share our life stories and eat wholesome food at this large community table prepared by the retreat staff.
Influenced by the unique and intriguing Mayan culture, the locals love to use different native plants in their food and drinks. Rather than just giving their everyday diet a spiritual and material purpose, they create a natural flavour profile in the dish to make it nutritious and delicious. This unique concept gave me the idea that I could incorporate the' Mayan cooking concept' into the dishes and recipes we are familiar with in the Western world, making them healthy and tasty for everyone.
